I personally find a ratio of 1 part sorghum flour 0.5 parts tapioca to be good, and avoid potato starch because potatoes give me hives! But what a nuisance that OAS is so variable! Thanks for the feature of the muffins...Hi Danielle,<br />Thanks for the feature of the muffins! I hadn't tried that flour yet, I will put it on the list. I am trying all alternate flours and so far no grain works without a reaction. My only go to flour for pancakes etc, has been potato. It always works. I keep searching. Not a lot of solutions with this you just have to change your ways drastically.
