This is pretty much my husband's new favorite dinner. He's been so excited since I created it that he asks for it all the time now when I make my weekly meal plan.
He also really likes it because a) there's both protein, carbohydrates, AND veggies in it b) it only requires one pot to make = easy cleanup AND c) it is so quick and easy to make that I can have it all ready within 30 minutes from start to finish.
Ingredients for Vegan, Gluten Free Tuscan Noodle Soup (serves 4)
3 Tbsp olive oil
2 garlic cloves, minced
1/4 medium-sized onion, diced
2 carrots, peeled and diced
8 cups water OR veggie broth
Approx. 1 cup gluten free macaroni or fusili- style noodles
1 (15oz) can crushed tomatoes
1 (15oz) can chickpeas or white beans like black-eyed peas or white kidney beans
2 bay leaves
1/2 - 1 tsp dried red pepper flakes (this will depend on your heat tolerance)
3-4 cups fresh chopped kale, Swiss chard, or spinach
1 tsp sea salt
1/4 tsp ground black pepper
1/2 cup fresh chopped parsley
Nutritional yeast* OR shredded cheddar cheese (dairy-free or real cheese) - optional
Directions
1. In a large pot, heat oil over medium heat. Add garlic and onions and saute for 5-7 minutes to soften. Add carrots, water, noodles, tomatoes, chickpeas / beans, bay leaves and pepper flakes. Bring to a boil, then reduce heat to simmer. Simmer 20 minutes until noodles are soft.
2. Add greens, salt, pepper, and parsley and simmer 3-5 minutes until greens are wilted. Serve topped with fresh parsley and nutritional yeast or cheese (if desired).
* Nutritional yeast is vegan - it's a flaky form of deactivated yeast that has a cheesy flavour and is a significant source of B vitamins.
