Spiced Butternut Squash Spread |
What if you could dip your veggies, guilt free, into pumpkin pie? I think it would go something like this...
This spread is a perfect dip in fall flavours, and also great for smearing on scones and toast. It's beautiful bright colour would look wonderful laid out for a Halloween party with some veggies and crackers around it, or would be just at home on your toast in the morning.
This came together as a bit of a mad concoction when I realized I needed something to smear onto my Gluten Free Spiced Butternut Squash Scones, but has since proven so savory and versatile that I'm posting it all on its own.
Ingredients for Spiced Butternut Squash Spread
5.5 Tbsp butternut squash puree (see the recipe for Tropical Fall Salad for a quick and easy way to steam squash)*
1 Tbsp softened butter or vegan alternative (like Earth Balance)
2 Tbsp honey or agave
1/2 tsp vanilla
1/4 tsp cinnamon
small pinch of nutmeg
1 Tbsp water (optional, for smoother texture)
Directions:
Blend all ingredients together, adding water if desired. Serve warm or chilled. Store in the fridge for up to 4-5 days.

OAS Info: Squash is related to zucchini, which is on the OAS list, although the process of steaming *should* denature the proteins and make this safer to eat. It's
