My Gluten Free, Locavore-ish Weekly Meal Plan

Naturally since I’ve been traveling the past month and visiting family and doing tons of socializing, there’s been little sense in even attempting to create a weekly meal plan. Especially since I sort of sprained my ankle, had to get 2 x-rays, got a stomach bug, and so on and so forth.

But I have to confess (and some of you may have noticed) that even before the holidays I fell off the weekly meal plan wagon.

In large part this had to do with the post-apocalyptic weather we had several weekends in a row, which happened to fall on days when I would normally visit the local farmers market. Since we walk about 15 minutes to the market and back (we have no car in Wisconsin thanks to difficulties around import laws), walking in snow, rain, and wind while carrying bags of groceries is not the easiest thing to do.

Regardless though, whether I make it to the farmers market or not we still need to eat, and I still should be meal planning. Luckily, despite a little bit of snow this morning we trekked out to pick up some locally grown organic root veggies and I’m determined to try harder to meal plan regularly.

Now let this week’s meal planning begin! 

This week I’m planning around the following organic, locally grown produce:

* 4 watermelon radishes                   * 2 medium-sized turnips
* 4 parsnips                                         * 5 red and golden beets
* a bag of carrots                                * 1 red onion
* 1 large sweet potato 


5 Ways to Use Winter Radishes


Week of: January 18 – 24, 2014
In the Freezer:  Big Batches of Brown Rice, Chicken Noodle Soup, lentil soup, peas & veggies, 1 head cabbage, chicken legs, GF gnocchi and Polish kopytka, frozen cranberries
In the Fridge:  2 boxes of organic mixed greens, 1 bunch kale, ginger, garlic, 1 head broccoli, yogurt, cheddar cheese
In the Cupboard: organic cornmeal, organic popcorn, organic lentils, chickpeas, black beans, dried peas, GF flours, local honey (5lbs), rice vermicelli, rice noodles, canned fruit
Day:
Dinners
Saturday
Having a friend over for dinner – clearing out the freezer of lentil soup & Polish kopytka, and making sautéed cabbage and mushrooms, and maybe a sweet potato flat bread?
Sunday
Hubby is making root veggie stew
Monday
Roasted chicken legs with jerk sauce and steamed veggies
Tuesday
Brown Rice Sushi Rolls (made with Frozen Brown Rice and steamed veggies instead of cucumber)
Wednesday
Bean burgers (recipe to come) and sautéed kale
Thursday
Hubby is making Italian pasta
Friday
Some form of Scrap Stew
What’s Cookin’ Sunday: Organic Cornmeal Salsa Bread, baked beets, baked beans for freezing (recipe to come), Quick Dill Pickled Watermelon Radishes
