If you're like me, you probably have a fridge full of leftovers from Easter. It's a blessing and a curse when both your in-laws and your parents send you home with containers full of poultry, potatoes, and veggies.
With all those bits and pieces, it's not always easy to make a full meal. OR, maybe you're just tired of eating the same thing day in and day out and wondering what to do with it all...
Well here's a list of suggestions for using up leftover baked sweet potatoes in baked goods, burgers, soups, AND salads, so you can completely transform Easter dinner into something else entirely!
Right now I have a bunch of mashed potatoes, and some baked sweet potatoes in the fridge, and I probably have enough to make a batch of every recipe on this list!
Please forgive me for some of the photos on the bottom of the list, the recipes are some of my early ones, back before I actually had a decent camera and learned how to use it. One day I will get around to re-doing those posts, but the recipes are still favourites of mine, so don't let the ugly photos stop you!!
Also, for those recipes below that call for pumpkin, or other squash, mashed sweet potato works as a perfect substitute, so don't let that throw you off.
