GF Fusilli Stuffed Acorn Squash, Fusilli Stuffing + Catelli Gluten Free Pasta Review & Giveaway (Canada Only)



I'm back from a long holiday hiatus with a giveaway ! 

Part of my hiatus was induced by a long Christmas month spent in Vancouver, BC visiting family and friends, as well as multiple trips to the doctor for back and ankle pain, followed by a couple of x-rays, followed by a bout of some sort of stomach bug most likely courtesy of my fellow x-ray patients at the hospital. I guess gastrointestinal distress is a small price to pay for the benefits of Canada's health care system, namely that I was able to get the x-rays in the first place!  Now here's hoping that sprained ankle heals and the mysterious back pain is revealed through the power of medical imaging...

One of the other benefits of being in Canada was that I was able to review some Catelli Gluten Free Pasta, and I'm passing that benefit on to you (well the Canadians) with a coupon and giveaway.

The Waste Not Want Not Wednesday link-up party is inspired by World Food Day (Oct. 16), and recent articles such as this one that show between 40-51% of food in Canada and America ends up in the garbage.  Over-consumption, lack of knowledge, low cost and over purchasing are common causes of food waste in North America.

This unsustainable over-consumption extends to so many aspects of our lives.  So perhaps if we all share our tips for consuming a little less stuff in general, cooking more responsibly and frugally, and living eco-friendly, we can each take a small part in making our world a little more sustainable.

And besides, who couldn't save a little bit of money anyway? 


Easy Asian-Style Soup in 15 Minutes





Growing up on the BC West Coast means exposure to a ton of fantastic Asian food thanks to our large Asian population.   Alas, most Chinese food is out of reach for gluten intolerants given the prevalence of soy sauce (which contains wheat) and breading of food. 

It is cruel to have grown up with regular dim sum and Chinese buffets and suddenly not be able to touch the stuff.  So to satisfy my most basic of cravings, I whipped up this simple bok choy and noodle soup.  It's very cheap, healthy, and filling, and the best part is that it only takes 15 minutes from start to finish!
